"Pilloni has to be one of my favourite restaurants in Brisbane. Acciughe cantabriche. Culurgiones. Arista di maiale. Unless you speak Sardinian, you probably won’t know how to pronounce anything on the menu. But don’t let that hold you back because it's all delicious, distinctive and accompanied by English translations. Though the dishes are drawn from the ‘Blue Zone’ island of Sardinia, which floats in the Mediterranean Sea between Italy and Spain and is thus influenced by both, the produce is purely local. Pilloni’s pièce de resistance is its five-hour fire-roasted suckling pig - but you'll need to request it 24 hours in advance. When I visited, we dined instead on charred kingfish collar with caramelised tomato and chilli, ember-roasted mackerel accompanied by peppery, earthy mustard greens, and lemony, blistered shisito peppers with labneh and pistachio.
