"Any Portuguese person thinks they are the king of the bifana. After all, what is the big secret behind preparing a few pieces of pork in bread? Several. At Conga, the technique for preparing the bifana has been perfected down to the smallest detail. The result is a crispy bread filled with tender, slightly spicy and absolutely delicious bifanas. The restaurant was sold from the original family owner to a new investor, who was more concerned with adapting the business to the tastes of tourists (removing some of the spice and adapting the sauce to more sensitive palates) than with preserving the tradition and good name of the restaurant. It is a legitimate and understandable way of doing business, but in my opinion it has lost its magic, and many people from Porto have stopped trusting Conga for a night out."
